More and more scientific studies confirm that drinking coffee is good for your health when consumed in moderation. According to Harvard Health Publishing, drinking 2 to 3 cups of coffee a day can reduce the risk of cardiovascular and respiratory diseases. Furthermore, the National Cancer Institute (NIH) indicates that people who consume coffee regularly, even decaffeinated, have a lower risk of premature death.
Other research also links regular coffee consumption to healthier aging and a lower probability of developing neurodegenerative diseases such as Alzheimer's and Parkinson's. In short, coffee not only stands out for its aroma and flavor, but also offers significant benefits supported by science.
Not all coffees are created equal: why does quality matter?
However, not all coffee provides these health benefits. Many commercial coffees contain defective beans—such as impurities, uncontrolled fermentations, or damage—that negatively affect both taste and health.
Two practices that decrease the quality of coffee

Very dark or extreme roasting:
Known as "Italian roast" or "French roast," it roasts the bean almost to the point of burning, which disguises defects but eliminates the natural nuances, leaving a bitter, dense, and difficult-to-digest coffee. -
Roasting (adding sugar during roasting):
Some low-quality coffees are roasted with added sugar to caramelize the bean and hide defects. This "torrefacto" coffee loses natural antioxidants, generates potentially harmful compounds such as acrylamides, and produces a less healthy and strong-tasting beverage.
What makes a coffee healthy?

What if I don't tolerate coffee well?
Some people may be sensitive to caffeine or certain compounds in coffee that cause them discomfort. However, before ruling it out, it is recommended to try a high-quality, fresh, and properly roasted coffee, as the experience could be very different.
